-In any case, there's a bunch of different kinds. Chinese, Japanese, dirty kne-- I mean, Sumatran, Red, Mainland & Taiwan Serows. Sorry I have such strong feelings about Serows.
I've heard they can't swim in alcohol. Lots of alcohol is a sure way to drown your serows.

-Markhor are a pretty good example of "Wild Goats", with giant spiralled horns. They're likely the ancestor of SOME breeds of Domestic Goat, and are the National Animal of Pakistan. I've seen quite a few of them in zoos- the hardiness and smaller size of Goats make them ideal zoo animals, and they're Endangered and cool-looking enough to be worthwhile animals to draw visitors. Similar animals include the Ibex (another Goat ancestor), Barbary Sheep and Eurasian Taur.

-The Saola created quite a stir when naturalists visisted a region of Vietnam for the first time- this small relative of cattle, goats & sheep was the first large mammal discovered in over fifty years! People had long since thought we were DONE finding new big animals in the jungles, and this was proof there were some mysteries remaining. They are exceptionally rare and live in tiny, fragmented regions, meaning they are extremely Endangered.

-Takin are large, colorful relatives of Goats & Muskox, being about 700 lbs. (though they vary from 500-1,300 lbs.). Their coats may have inspired the "Golden Fleece" of Jason and the Argonauts fame. They are Vulnerable to extinction, and easily-hunted by cornering them at their beloved salt licks. Statistically, I just lowered the Muskox's strength and toughness to a slightly-smaller scale.

-Muskox are a cool-looking bovine species (though are called "ugly moose" and "ugly bison" in Cree languages), but are usually much smaller than their family members, being a mere 990 lbs. at maximum. Their babies look like four-legged Cousin Itts. They're actually more closely-related to Goats & Sheep than actual Oxen, too- the largest of the Ovis portion of Bovidae. A notable battle tactic is for the entire herd to form a circle- asses in, horns out; with the calves in the middle. This disallows any predators (generally Wolves) from getting at the vulnerable babies, and allows the adults to maximize their frontage. Many other bovine species do this, but Muskox are the most famous for it.

-A Muskox, despite being no taller than a man's shoulder, are still quite heavy and can do some real damage on impact, so hit PL 6. Much more badass than anything else among the Sheep & Goats, but still lower power than a full-sized Bull or Bison.

CATTLE:
-Cattle are among the most important animals in human history- their ease of domestication (you need a fence and a field, really), sheer size, relative calmness, etc. has made them the ultimate farm animal. The book Guns, Germs & Steel actually posits that proximity to the diseases these things created were what allowed Europeans to take control of the entire globe, alongside a few other factors (see, cattle produce smallpox, which Europeans developed immunities to... many other peoples were not so lucky). Of course, the males of the species are notoriously ornery and quick to react with violence, to the point where they can be used in matadorial contests. For this reason, most farmers only keep a few un-castrated males around to further the herd, and leave the rest to lesser fates. Being really huge (ie. full of enough meat to feed entire families for weeks) and really easily cowed (where do you think the expression comes from?) into going and doing what you want, they're the perfect farm animal.

-Most cattle species are huge- except for the Eland, no other Bovine species comes close to most of these. The Yak is a relatively little cow, and its well over 1,000 lbs. in weight. Species include the Yak (woolly Asian cow), Banteng (also Asian), African & Water Buffaloes (similar-looking heavy creatures, the former Africa's only cow), the Bison of America & Europe, the Gaur (massive Indian species) and Muskox (really fluffy Arctic species).

-There's not a whole lot of room for most cattle in campaigns, as they make crappy mounts (unless they're dragging your cart around Oregon Trails before you die of dysentery), and are pretty generic animals, unless you go all-out with crazy stuff like The Red Bull. Some of it's wilder relatives are more commonly-seen, and more powerful. But still, a standard Bull is a fearsome opponent, doing horrific damage and packing a really bad attitude- they will run you down and smash you into the ground, and entire herds of them can attack at once. Sure, they're just livestock, but a really mean one is a frightening opponent. The cows are naturally much calmer and less-powerful, generally packing itty-bitty horns by comparison to the males. But don't underestimate them- cattle cause a TON of injuries to farmers across the world, owing to thousand-pound weight and a lot of strength.

-Castrated males are called Steer, and a Steer used for draught work is an Ox- Oxen are stronger than horses, but much slower- this can sometimes be advantageous.

-A Bull is PL 6.5, and extremely strong and tough. The only predators that could threaten one are the biggest of the big, as most anything smaller than 300 lbs. wouldn't even bother tackling something this big. The injured and sick, MAYBE. But even Lions typically won't go up against a full-grown male. Wise farmers will note that a gentle bull will more likely kill his owner than the vicious one, of course you'll let your guard down around him- bulls are responsible for 42% of all livestock-related fatalities in the United States.

-Most modern cattle in the European-descended world came from the Aurochs, a now-extinct breed of Bovine- various other Asian breeds were also tamed, like the Water Buffalo, Guar & Banteng. Given the many uses of Cattle, they were domesticated with aplomb, and the originators slowly disappeared, with the last known specimen dying out in 1627 (huh, way later than I thought) in the forests of Poland- over-hunting, crossbreeding, domestication and disease wiped out the last of them. The species started being domesticated around 600 B.C., and were extremely-common even in Roman times, often being used in the Arenas, or as prizes for noblemen hunters. An Indian variety was turned into the Zebu breed, and disappeared centuries earlier, while a North African one died out before the Middle Ages.

-The exact size can be difficult to ascertain, but males could reach 63 inches high, and may have once hit 3,300 lbs.! The horns were larger than in most cattle breeds, and the legs were longer. Males were known to have severe fights with each other. The Aurochs is basically a more-survivable, fightier Bull, hitting PL 7.5.

That is surprising, I was under the impression that they'd all gone extinct in the Middle Ages.

Actually, cows' horns can be several inches, depending on the breed and genetics.

Also, females can be just aggressive as bulls. My sister and brother-and-law recently sent one of theirs that they wanted to keep (because it produced good calves) because it was too mean, and they had young children.

Yeah the information I found said they went extinct in 1627 not 1927.

However a few years ago I remember reading about a project aimed at reintroducing the aurochs species. I can't find anything recent about it so it's possible that it ended in failure

The Heck Cattle breed is one such attempt, but so far isn’t quite the same. It’s hard to “breed back” things.

Yeah the information I found said they went extinct in 1627 not 1927.
